Harry Potter Butterbeer

This is liquid candy amazingness.

  • 2 liter bottle of cream soda, left in the fridge overnight
  • 1/4 tsp Caramel Extract (we had to order this from Amazon)
  • 1/4 tsp Butter Extract

Open the 2L, add the caramel extract and butter extract directly into the bottle, and close the bottle.  Slowly shake/roll to distribute the flavoring.  Then let the bottle sit for a couple minutes before opening and pouring into glasses.

We used clear plastic 16oz solo cups for easy clean up, and ended up with 7 glasses per 2L.  Multiply the amount of 2L bottles as needed.

Cream topping

  • 1 cup Heavy Whipping cream
  • approx 1/4 of a 12oz jar of butterscotch topping (we poured it directly into the cream without measuring)
  • approx 1/4 cup powdered sugar to start

Put all ingredients into a bowl.  Then use the whisk attachment of your hand mixer to start whisking it all up.  If it is not firming up well, add another tablespoon of powdered sugar and mix longer.  Keep adding powdered sugar until it firms up into a whipped cream.

Take a generous tablespoon of whipped cream, put it in the glass on top of the cream soda, and then dab it a couple times so it spreads out evenly on top of the cream soda.  Voila!
