Slow-Cooked French Onion Soup

Recipe for a 3 quart slow cooker.  Just double it if you have a 6 quart slow cooker.

  • 3 medium onions, sliced
  • 2 tbsp butter
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 1 tbsp sugar
  • 2 tbsp flour
  • 1 qt low-sodium vegetable broth or chicken broth
  • 1/2 cup dry white table wine

Put onions in a frying pan with butter and oil and cover.  Fry on medium heat until they are soft, mixing occasionally.  Once they are soft, add the salt and sugar.  Then cook for 15 minutes.  Stir in the flour, and cook another 3 minutes.  Then put it all into the slow cooker, and add the broth and wine.  Cover it, and cook on low for 6-8 hours.  Done!

Serve with sliced French bread and shredded Mozzarella cheese.  If you are feeling fancy, you can toast the bread with sliced Swiss cheese on it in the oven, dish the soup into individual bowls, and then put the toast on top.
